Celebrating Summer with Blueberries

The signs of summer have sprung up all around us.

One of our favorites  . . . blueberries. We just can’t seem to get enough of them!

There are so many wonderful eye-popping marvels of summer all around us.  Just open your eyes and take it all in . . . .

summer fruits – strawberries and blueberries!

So much to inspire us!

This morning as we woke to celebrate the 4th of July – we decided to devour more blueberries and get creative with them. Of course, this had something to do with pancakes!  We created stars and stripes, using our delicious pancakes, blueberries, and of course, with the children’s help -chocolate chips.

We used our quick and easy gluten-free, dairy-free recipe – and devoured every bite.  Try it out yourself:

You will need:

3/4 cups of spouted brown rice flour

1/2 cups of millet flour

2 T ground flax seed

1 t baking soda

1/2 t guar gum

4 T all natural applesauce

1 1/2 cups of milk (We use rice milk – use your favorite allergy friendly milk)

Mix all the dry ingredients together in a bowl.  Add the applesauce and milk.  Mix well.  If mixture is too thick, add a little more milk. You can add the blueberries directly to the batter or drop them in as you spoon them onto your pan.

Spoon onto a griddle, or a fry pan works just fine.  Cook until bubbly over medium heat, then flip over.  A couple of minutes on the back side and they are ready!

Top with more fresh blueberries and your favorite pure maple syrup.  A fabulous way to start the day!
