Gluten-Free Carrot Cake Date Balls

Recently we came across a recipe for these Carrot Cake Date Balls on Pinterest, which looked delicious. As usual, once we read the recipe, they were not something we could make due to our food allergies.

 

We took the carrot cake date ball recipe and changed it up to create our own, nut-free, gluten-free, dairy-free, and corn-free recipe.

 

The result = a new easy and delicious treat we love!

Make your OWN Carrot Cake Date Balls

 

Ingredients needed:

1 cup of dates (soak for 5 minutes in hot water)

½ cup coconut flour

1 cup shredded carrots (about 2 medium carrots)

¼ cup ground flax seed

1 t cinnamon

¼ t nutmeg

¼ cup Shredded coconut

Pinch of sea salt

¼ cup Shredded coconut for coating (optional)

Water as needed

 

Soak the dates for 5 minutes in hot water.

 

Peel and grate the carrots. This is a great step for the kids to do for you!

 

Add everything to your food processor: carrots, dates, spices, shredded coconut, coconut flour, and ground flaxseed. Add about 1-2 T water as needed. Blend for a couple of minutes.

 

Stop and scrape down the sides. Blend until it all comes together.

 

Be careful: do not put your hand into the mixture as the blade is very sharp. Scoop out a Tablespoon of dough and form it into a ball.  Roll in shredded coconut or nuts to coat if desired or leave plain.

 

Eat and enjoy. They last in the fridge for about a week (if they last that long!). You can also freeze them.

 

Easy to Change it Up

 

Think about substitutions if you don’t have access to some of these ingredients:

No dates – use raisins

No ground flaxseed  – use walnuts or cashews

No coconut flour –  use certified gluten-free oats

Instead of shredded coconut for coating, you can use chopped nuts.

  1. Just curious if anyone has tried to substitute beans (pinto, cannellini, garbanzo) for the coconut flour? I think it would be a great way to get more fiber. I have made brownies that way - but wondering if it would work here guessing 1 cup to replace the coconut flour (since coconut flour is so dense)
    1. Hi Kathy - Great questions! The wonderful thing about making date balls is that you can easily mix up the recipe if you have other intolerances, or just don't have the ingredients on hand. Substituting beans for the coconut flour would be great in this recipe. I would suggest garbanzo beans, cannellini would be good too. Start with just 1/2 cup, you can adjust if needed but that should do it. GF oats could be another good substitute. Let us know what you do and how they come out! Happy cooking!
