Think again, my gluten-free friend!

 

Years ago I was taking a class in a Chinese Restaurant prior to the restaurant opening for the day. As we were ending our class, the smell of Chinese food cooking wafted into the air.

 

The smells were amazing! My stomach was wide awake!

 

I hadn’t eaten Chinese food for a few years at that point, since I began my gluten-free diet.

 

Man . . . the smell was really getting to me – Oh how I wanted to eat the food!!

At the end of class, I walked over to the manager and asked if they could make any of their dishes gluten-free.

 

He was so good and explained my options. Oh, I was jumping for joy! I ordered what was available and sat impatiently waiting for my food.

As I drove home, I knew how happy this was going to make my family when I walked into the house. To say the least, my 30-minute drive home felt like an eternity – yet smelled heavenly.

 

When I got home it felt like Christmas – the kids were so excited to have GF Chinese food – all like a new present we just tore open. And, it was so good!

 

Kick that deprivation to the curb

 

Yes, the food was worth the wait.  But, it showed us that we didn’t have to give up the foods we had loved prior to being GF.  We decided that from then on we were going to find or recreate the dishes and treats we missed.

 

We were all done living in deprivation in our gluten-free lives.

 

So, here’s our version of gluten-free fried rice. If you haven’t had this in a while – dig right in!

 

Healthier gluten-free version

 

Cooking at home, where YOU are in charge of the ingredients, creates a much healthier version than you would get at a restaurant.

 

When we get in the mood for Chinese food – we just make this dish and enjoy it!

gluten-free fried rice

 

Ingredients:

1 – 1 ½ cups of cooked rice (brown or basmati rice work well)

2 carrots, sliced thinly

1 small onion, diced

2 cloves of garlic, minced

¾ cups of frozen peas, defrosted

2-3 Tablespoons of tamari (GF soy sauce)

¼ cup of water if needed

1-2 T olive oil

Other optional additives: Diced cooked chicken, scrambled egg, Bok choy chopped small

Next:

Cook the rice according to directions.

Sauté all the veggies and stir in the sauce- then add the rice. Easy and delicious!

Follow the whole recipe below.

 

Serve with your favorite Chinese dishes or chicken, steak meals. Or simply enjoy it alone.

 

We enjoyed the restaurant’s food for a bit before they closed their doors for good.

 

We were sure happy we had our own version. Now, you do too!

Gluten-Free Fried Rice

Course Main Course, Side Dish

Ingredients
  

  • 1 - 1½ cup cooked rice (brown or basmati rice works well)
  • 2 carrots, sliced thinly
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ¾ cup frozen peas, defrosted
  • 2-3 T tamari (GF soy sauce)
  • ¼ cup water (if needed)
  • 1-2 T olive oil

Other optional additives: diced cooked chicken, scrambled egg, Bok choy chopped small

    Instructions
     

    • Cook the rice according to directions.
    • Peel and slice the carrots, and dice the onion.
    • Add the onion to a large skillet with 1 T olive oil. Sauté the onion for a few minutes on medium heat.
    • Add the sliced carrot and stir fry for about 5 minutes, to soften the carrots.
    • Add the minced garlic to the pan and stir around.
    • Add the peas and cook all together for a few minutes.
    • Add 2 T tamari to the pan and stir all together.
    • Slowly fold in the rice to the veggies mixture, add more tamari as needed.
    • If the rice is dry you can add a little water to help blend all together.
    • If adding in the chicken or scrambled egg, do so now.
    • Stir everything together to coat all with the sauce.
    • Serve with your favorite Chinese dishes or chicken, steak meals. Or simply enjoy it alone.
