Mix all of the ingredients together in a shallow bowl, except for the cinnamon-sugar mixture.
Soak 1-2 slices of GF bread in the wet mixture. Turn each slice over after soaking about 30 seconds to a minute. Be careful here as GFbrea d can fall apart quickly so you don’t want to soak it too long.
If using softer bread, coat the slices in the mixture but do not soak for too long. A sturdier, harder bread, needs to soak a little longer to soften up. Make sure to soak each slice on both sides of the bread.
Place soaked slices on a preheated skillet or griddle. I do not typically butter or oil the pan but you can if you prefer.
Cook 2-3 minutes per side of each slice so that it crisps up just a bit.
Mix the cinnamon and coconut sugar in a small bowl, to sprinkle over the French Toast before serving.
Once cooked, smother with your favorite butter (Earth Balance), pure maple syrup and extra sprinkle of the cinnamon sugar topping.
Serve with fresh fruit. Sit back and enjoy – so much better than shoving it down, running to the bus!
