Gluten-Free Carrot Cake Date Balls

This is the perfect recipe to get your kids in the kitchen and help make this tasty treat!

Ingredients
  

  • 1 cup dates (soak for 5 minutes in hot water)
  • ½ cup coconut flour
  • 1 cup shredded carrots (about 2 medium carrots)
  • ¼ cup ground flax seed
  • 1 t. cinnamon
  • ¼ t. nutmeg
  • ¼ cup shredded coconut
  • Pinch of sea salt
  • ¼ cup shredded coconut for coating (optional)
  • Water as needed

Instructions
 

  • Soak the dates for 5 minutes in hot water.
  • Peel and grate the carrots. This is a great step for the kids to do for you!
  • Add everything to your food processor: carrots, dates, spices, shredded coconut, coconut flour and ground flax seed. Add about 1-2 T water as needed.
  • Blend for a couple of minutes. Stop and scrape down the sides. Blend until it all comes together.
  • Be careful: do not put your hand into the mixture as the blade is very sharp. Scoop out a Tablespoon of dough and form into a ball.
  • Roll in shredded coconut or nuts to coat if desired or leave plain.
  • Eat and enjoy.

Notes

Keep in fridge for about a week or freeze.
