Gluten-Free Carrot Cake Date Balls

Ingredients

dates (soak for 5 minutes in hot water)
½
cup
coconut flour

cup
shredded carrots (about 2 medium carrots)
¼
cup
ground flax seed

t.
cinnamon
¼
t.
nutmeg
¼
cup
shredded coconut
Pinch of sea salt
¼
cup
shredded coconut for coating (optional)
Water as needed
Instructions
Soak the dates for 5 minutes in hot water.
Peel and grate the carrots. This is a great step for the kids to do for you!
Add everything to your food processor: carrots, dates, spices, shredded coconut, coconut flour and ground flax seed. Add about 1-2 T water as needed.
Blend for a couple of minutes. Stop and scrape down the sides. Blend until it all comes together.
Be careful: do not put your hand into the mixture as the blade is very sharp. Scoop out a Tablespoon of dough and form into a ball.
Roll in shredded coconut or nuts to coat if desired or leave plain.
Eat and enjoy.
Notes
Keep in fridge for about a week or freeze.
