Cook the rice according to directions.
Peel and slice the carrots, and dice the onion.
Add the onion to a large skillet with 1 T olive oil. Sauté the onion for a few minutes on medium heat.
Add the sliced carrot and stir fry for about 5 minutes, to soften the carrots.
Add the minced garlic to the pan and stir around.
Add the peas and cook all together for a few minutes.
Add 2 T tamari to the pan and stir all together.
Slowly fold in the rice to the veggies mixture, add more tamari as needed.
If the rice is dry you can add a little water to help blend all together.
If adding in the chicken or scrambled egg, do so now.
Stir everything together to coat all with the sauce.
Serve with your favorite Chinese dishes or chicken, steak meals. Or simply enjoy it alone.
