No-Bake Gluten-Free Pumpkin Oat Balls

These are a fabulous, fun treat to get your kids in the kitchen to enjoy. Easy to make and delicious to eat!
- ½ cup pumpkin puree
- 2 T pure maple syrup
- 1 t. pure vanilla (optional)
- 1 cup certified gluten-free oats
- ¼ cup ground flax-seed (not whole seeds)
- ¼ cup unsweetened shredded coconut
- 1 ½ t. cinnamon
- ¼ t. nutmeg
- ¼ t. ground ginger
- Pinch or more of ground cloves
- Pinch of sea salt
- ¼ cup dark chocolate chips
Optional additions: raisins, dried cranberries or cherries
Whisk the pumpkin and maple syrup in a medium bowl.
Add in all other ingredients, except the chocolate chips.
Mix to combine, using a fork or wooden spoon.
Once everything comes together in a ball, stir in the chocolate chips until distributed.
Add in other additions if desired.
Using a small spoon or scoop, scoop dough and roll into golf-sized balls. You can make them smaller for younger children.
Place in fridge to set in a covered container. These last about a week - if you have any left!
