Coconut Gluten-Free S'mores Bars

  • ½ box gluten-free graham crackers
  • 3 T coconut oil
  • 1 cup chocolate chips
  • 1 cup marshmallows
  • 1 cup shredded coconut
  • ½ cup coconut milk


  • Preheat the oven to 350°.
  • Place the graham crackers in a plastic ziplock bag and smash to crumbs with a rolling pin.
  • Place the 3T of coconut oil In a 9×9 glass baking pan.
  • Melt in the microwave or place the dish in the oven as it is heating as it doesn’t take much to melt. (Don’t let your pan get too hot.)
  • Swish the melted oil in the pan, pour in the crumbs and mix with the oil. 
  • Pat down to form the base for the bars.
  • Spread the small marshmallows over the top.
  • If you have large marshmallows, chop them up and spread them around the pan. (Kitchen food scissors work well here.)
  • Spread the chocolate chips over the top of the crumbs.
  • Sprinkle the shredded coconut over the top.  Then, pour the coconut milk evenly over the pan.
  • Bake for 25 minutes.
  • Let cool.
  • Slice your Gluten-Free S’mores Bars and enjoy!
