Coconut Gluten-Free S’mores Bars

Sometimes you just need a little treat!

 

And, truth be told, now that you’re gluten-free you may be missing this fantastic summertime treat.

I was trying to come up with a new recipe to celebrate the end of our school year.  During the summer, my children always want to make s’mores when we cookout on the grill.  And, for some reason, I was thinking about 7 Layer Bars, which I haven’t had in years!

 

So I thought . . . why not put them together and see what happens.

 

S’more’s + 7 Layer Bars  =  Delish!

 

This is super simple and totally delicious – a little sinful – but we don’t eat this every day!

 

Try out your own Coconut Gluten-Free S’Mores Bars

ingredients for gluten-free s'mores bars

You need:

½ box of gluten-free graham crackers

3T coconut oil

1 cup chocolate chips

1 cup marshmallows

1 cup shredded coconut

½ cup of coconut milk

Place the graham crackers in a plastic ziplock bag and smash to crumbs with a rolling pin.

 

This is great stress relief if anything has been bothering you!

Place the 3T of coconut oil In a 9×9 glass baking pan.

 

Melt in the microwave or place the dish in the oven as it is heating as it doesn’t take much to melt.

 

(Don’t let your pan get too hot.)

Swish the melted oil in the pan, pour in the crumbs

and mix with the oil. 

 

Pat down to form the base for the bars.

Spread the small marshmallows over the top.

 

If you have large marshmallows, chop them up and spread

them around the pan.

 

Kitchen food scissors work well here.

Spread the chocolate chips over the top of the crumbs.

Sprinkle the shredded coconut over the top.  Then, pour the coconut

milk evenly over the pan.

Bake for 25 minutes.

 

Let cool.

Ingredients
