As a kid, I remember having a cookout at a neighbor’s house where they served a cold rice salad. I was instantly hooked.
This dish is so simple and delicious – adding a light addition to your summertime meal.
Years later we now have this gluten-free summer rice salad as a go-to summer dish – try it and you’ll know why!
Easy Ingredients:
1 cup of cherry tomatoes
3 green onions (scallions)
1 ½ cups of cooked jasmine or basmati rice
Sea salt to taste
Cook your gluten-free rice as directed.
Have you tried using a rice cooker?
They are fabulous!!
Fluff the rice with a fork, and then cool in the refrigerator.
While the rice is cooling, slice the tomatoes and scallions.
Fluff up the cold rice and scoop it into a big serving bowl.
Add the chopped veggies and stir to incorporate.
Sprinkle with sea salt to serve.
Every time I serve this dish my kids say, “Oh yes! Love this rice!” The beauty is that it goes with so many meals, from chicken to fish to burgers.
